Kokuryu has been pursuing hand-made sake ever since its founding in 1804 (Bunka 1), the first brewery Ishidaya Nizaemon. Due to the excellent water quality of the area and the encouragement of the Matsuoka clan, there were 17 sake breweries in its heyday, but today there are only one brewery, Kokuryu Sake Brewery, which has the trade name Ishidaya. This is the result of stubbornly maintaining the traditional culture of sake brewing.
